Cusco was the scenario of a fair that showed the most traditional sweets of this region. By far, the favorite ingredient used by most cooks was the sachatomate  or tamarillo (Solanum betaceum) though others also used tarwi, añu, kiwicha, calabaza (pumpkin), oca, queso andino, nispero, trigo (wheat), and quinua.
